I Heart Pizza

Pizza is my absolute favorite food. I eat pizza every week. I guess you could say that I'm slightly addicted to pizza. (I feel an intervention coming soon since I just admitted it.) However, pizza and fitting into a bridesmaid dress don't exactly go well together.
The reason that I cannot eat as much pizza as I would like to. :(

I've been working out, of course, but I saw Cassey from Pop Pilates posted a "Cheap Clean Eats" segment on a flourless pizza and I was intrigued. I decided that I HAD to try it and see if this healthy pizza tasted just as good as a real one. (Cassey said it did, but I don't really trust people on pizza.) This began one crazy adventure in cooking!

Ingredients

Chopping up the cauliflower

Yes, I did buy a food processor for this recipe.

I'm not that great at making a circle.

I can measure out ingredients like a boss, though!

Don't be fooled! This does NOT taste like real pizza!
Ok, so it wasn't an epic fail in the kitchen. The pizza wasn't THAT bad. When you are a pizza addict though, it doesn't take the place of the real thing. So I had a second pizza adventure. I used Money Saving Mom's homemade pizza dough recipe and tried again.
Ingredient round up

Is this what the yeast is supposed to look like?

Time to knead some dough! How do I know when I'm finished?

Is it just me, or am I about to cook Australia?

After google verification, I did cook Australia and it tasted amazing!

Second pizza attempt was a success! Some things to note: (1) I did not attempt to make the dough look like Australia. I really suck at forming a circle and once I realized my pizza looked like Australia, I decided to keep it like that. (2) I wasn't sure if the yeast was actually working, so we also ordered a pizza from Pizza Hut in case this was a total bust. It was a good thing we did because we were all so hungry that both pizzas were completely gone!

Brilliant Plans

Sometimes my brilliant plans need to be laid to rest instead of sprouting alternate brilliant plans on top of them. It's a day off of work for us, and my co-worker and I are coming in to move some laptops and printers because doing that during regular business hours isn't fully feasible. With at in mind, I decided that I would come in a little early and get in a workout since I have a date later today. (Yes, you read that correctly.) We have a nice workout facility here, and since the athletes don't really use it much anymore since the newer/nicer one was built, it has become a place that the athletic staff tend to use. It has 2 ellipticals, 3 treadmills, a stair stepper and an exercise bike plus all the old school weight equipment you could need. I'm setting the stage for the story that I'm about to tell of my brilliant workout plan.

My brilliant plan for the morning workout was to bring the stadiums (that I slacked on once football season was over) inside to the gym. It seemed brilliant until I learned just how steep those stairs in the gym REALLY are. I knew they were steep from having to get from point a to point b during games, but it was torture for the 4 sections that I did this morning. Then, brilliant plan b is to hit the elliptical for some interval work. But I don't stop there because I see the holy grail of all treadmill workout plans that doesn't involve running! Our women's basketball coach set up a 61 minute power walking on crazy incline treadmill workout and posted it there for anyone who would like to use it. Our women's basketball coach must be psychic and is totally going to help me bring sexy back with this one. Especially since brilliant plan c was to do the first 3 stages when my legs hated me already. Now they want to kill me. If I happen to die, please let everyone know that my legs committed the murder...in the gym...with a medicine ball and 5lb weight.

#MOTY GREATEST HITS
Just because my legs hate me, doesn't mean I can't share selections from the killer playlist that got me through this morning's workout!

Gunpowder and Lead - Miranda Lambert
I Want You Back - Jackson 5

Slacker of the Week!

It has been a whirlwind week over here! The college that I work at has gone to all doubleheader basketball games and this week gave us 3 of them. (What were they thinking?!) Two down and one to go tomorrow! I had full intentions of posting on Sunday, but I was a slacker. Here are the weekly highlights:

Sunday, I had a massive couponing session. I say massive because I bought not one, but TWO newspapers. I always buy the local one, but I got a little wild and crazy and also bought the Houston paper. As I was checking out my first thought when the paper rang up was “$3.00 for a Houston Sunday paper?! This thing better be worth it!” I’m guessing by the mess you see below that it will probably have been worth it.

Also, I got this in the mail. Majorly stoked to be making some cookies in the near future.

Thanks Betty Crocker!

Cute Kid Moment of the Week
My daughter came to our basketball games on Thursday night. As I was walking her and the folks out after the women’s game, she met our soccer coach. She introduced everyone. When he told me hi, she immediately said, “my momma”. .. dad introduces himself “dad dad” (she says that instead of granddad)… then my mom “baby” (yea, grammy is a long time coming).

Bringing Sexy Back 2013
So, I found this workout on Fit Sugar and have been pretty religious with it. I've also taken to going all the way up to 10 instead of stopping at 5 and it is KILLER! Thanks Fit Sugar for awesome workouts such as this one that are sure to help me get back to sexy in 2013!

Elise v. Kitchen, Round 2
Ok, this week, I may have had to cheat a little because of my crazy work schedule. I did purchase all the ingredients for this crockpot chicken and rice recipe. With my work schedule the way it has been this week, my mom had to go about putting the ingredients in the crockpot so we could have dinner at a reasonable hour. I guess I will forfeit this victory to the kitchen, but it was still good.

Elise – 1, Kitchen – 1

Time to get that workout in that I mentioned earlier. Until next time, where I’ll discuss MOTY’s night out (which occurs tomorrow night!).
